When I met my husband I learned that he grew up in a house where the butter was kept out on the counter in a covered butter dish.  I grew up in a house where the butter was kept on a dish in the fridge.  Yes, this made it harder to spread, but I was used to it.  The argument for "my way" was that one more item on the counter is clutter, and an excuse to leave the butter knife out as well, with butter still on it.  I gave in and bought a nice white butter dish... but now we have little "talks" about the dish itself.  Between butters it needs to be wiped but isn't always, and it tends to collect toast crumbs that make it into my mac-and-cheese.

There is NO substitute for butter. No Country Crock does not even come close. It alos must be OUT of the fridge.

My boyfriend is big on real butter and we use it so often that we leave two sticks out, one package in the fridge, and backups in the freezer! After a stick of butter is gone I run the dish through the dishwasher...and sometimes the knife might be left out (not by me....) but I tend to just pick up after it and throw 'em in the dishwasher as well.

My dad ran a dairy operation, plus he had a degree in dairy science from Iowa State(not sure of its official name at the time) and he had no problem with butter left out of the fridge. It was kept in a cupboard in a covered dish and knives were always washed after each use. So that means it was safe - he was very vigilant about safety with dairy products.

Butter will not go bad unless it is left out for a very long time. Have never put in the fridge and always keep it in the cupboard (not on the counter) I am sure it is used up every few days. We have left it out for over 50 years so I am thinking this works just fine.

I broke the "tradition" in my family; my mom always left it out in a covered dish, but I prefer it in the refrigerator. I've always been under the belief that if it's a dairy product it belongs in the refrigerator.

I use real butter in stick form for just about everything, but my husband uses the "butter" spread in the tubs. Mine stays on the counter (one stick at a time) and the tub of fake butter stays in the fridge.

Oh my, the great compromise! Living alone, I can't eat butter fast enough to keep it from going rancid, and yes- butter can go rancid, it's super gross when it does! Instead I only use half sticks at a time, in a butter dish, but plan my meals a week at a time- so if I am going to have toast in the morning, I take it out at night, use it in the morning, then put it away. Rarely do I use "soft" butter for dinner, unless it is grilled cheese night, then the butter gets set out in the morning, and put away after cooking. Butter knives are always washed, and butter dishes are cleaned out between sticks- eew! that's just nasty! (and it is cleaned by soaking in hot water, then scrubbed w/ out soap, then dried) nobody likes soapy butter, but old butter in the bottom of a dish- eew! When it does get left out, it goes inside the microwave to reduce countertop clutter, keep critters out, and prevent from knocking off counter. You crack me up Sarah! thanks for the smile!

Posted by: Arika Eeeew, gross... butter left out??? Does Sam drink warm milk, too? Butter goes in the fridge. I actually use Brummel and Brown, not sticks of butter, but I would never leave it sitting out! GROSS. I'm on Team Sarah!!!!

We keep it in the fridge and we always have. At the same time, I would respectfully submit that in the grand scheme of things that this is a relatively minor issue.

I keep packaged in fridge, 2 sticks on counter. We eat it too fast for it to spoil

In the fridge in the summer time so it doesn't melt or get grainy. In the cooler months I leave it out of the fridge but in a cupboard so it is spreadable, but not cluttering the countertop. ( I cannot STAND clutter!)It is kept in a covered butter dish and the knife is ALWAYS washed after each use. Kinda a compromise.

Butter will go bad if left out, they do sell an item called a butter bell. Looks like a miniature piece of crockery with water in the base, and the butter in the lid. Allow butter to soften, spread it into lid, and presto soft butter when you want / need it. After you have taken what you need, put lid back inside crock (water surrounds butter keeping it fresh). Pick one out in a color you decide upon and you both win! There's nothing worse than fragging a piece of hot toast with rock hard butter watching it disintegrate before you can enjoy it. Grilled cheese with cold butter? Not going to happen. Then the kids are hungry and you're waiting for the butter to soften on the counter... Maybe we need a butter segment on the morning show?! I care a lot. I see it every day, for five years! I'm glad you care enough to read my blog and write, though! Anyone else know if it's unsafe to leave it out? That would be great!

I always thought butter went bad if it wasn't in the fridge. Isn't it made of cream, which will spoil if left out? My fiance and I have the same debate...

Sarah - I am with you! - another thing on the counter is clutter - and its not very attractive, with the knife still next to it. No way - put it in the fridge where it belongs. Try a tub butter that is kept in the fridge and is always soft.
