Pistachio Craisin Stuffed Duck Breast


1 6oz duck breast
1 oz pistachio shelled
1 oz craisins
1 pinch of salt and pepper
1 oz gorgonzola cheese


Filet duck breast open. Sprinkle with salt and pepper. Add pistachios, craisins, and cheese. Fold breast back over itself. Bake in a 350 degree oven until internal temperature is 160 degrees Fahrenheit. Plate with port wine balsamic reduction.
