B.B.B.S. Stuffed Mushrooms

Ingredients

  • 24 Baby Bella or stuffing mushrooms
  • 5 green onions
  • 6 oz. cream cheese, room temperature
  • ½ C. shredded sharp cheddar cheese
  • ¼ C. grated parmesan cheese
  • 8 oz (pre-cooked weight) spicy sausage

Directions

  1. Pre-heat oven to 400 degrees.
  2. Line cookie sheet with aluminum foil.
  3. Clean mushrooms.
  4. Remove stem from each mushroom-discard.
  5. Check each mushroom cap to ensure enough space exists for stuffing-enlarge if necessary.
  6. Brown spicy sausage.
  7. Crumble spicy sausage into small pieces.
  8. Chop green onions into very small pieces.
  9. Grate sharp cheddar cheese.
  10. Grate parmesan cheese.
  11. In a large mixing bowl, combine cream cheese, spicy sausage pieces,
    green onion pieces, grated cheddar cheese and grated parmesan cheese.
  12. Mix just until blended.
  13. Carefully stuff each mushroom cap.
  14. Bake approximately 15-20 minutes, or until mushrooms reach desired
    tenderness.
  15. Serve warm.
