1 Quart water
1/4 cup diced carrots
1/4 cup diced onions
1/4 cup diced celery
Vegetable season, salt & pepper to taste
1/4 cup diced turnips
1/4 cup diced potatoes
1/4 cup diced acorn squash
4 oz. black beans
2 oz. diced roasted red peppers
2 cloves minced garlic
1.) In a heavy stock pot, boil water, carrots, celery & onions for 10 - 15 minutes or until tender.
2.) Add remainder of ingredients and simmer for 15 to 25 minutes.
3.) Serve in your favorite soup dish.
