Healthy Harvest Soup

Ingredients

  • 1 Quart water
  • 1/4 cup diced carrots
  • 1/4 cup diced onions
  • 1/4 cup diced celery
  • Vegetable season, salt & pepper to taste
  • 1/4 cup diced turnips
  • 1/4 cup diced potatoes
  • 1/4 cup diced acorn squash
  • 4 oz. black beans
  • 2 oz. diced roasted red peppers
  • 2 cloves minced garlic

    Directions

    1.) In a heavy stock pot, boil water, carrots, celery & onions for 10 - 15 minutes or until tender.

    2.) Add remainder of ingredients and simmer for 15 to 25 minutes.

    3.) Serve in your favorite soup dish.
