Overnight Breakfast Casserole

Ingredients

  • 10 slices of white-wheat bread, cubed
  • 3/4 pound of ham, chopped
  • 3/4 cup onion, chopped
  • 8 ounces fresh mushrooms
  • 3/4 cups low fat Swiss cheese
  • 3/4 cup low fat cheddar cheese
  • 1 1/2 cups egg substitutes (equivalent of 6 eggs)
  • 2 whole eggs
  • 1 1/2 cups skim milk

    Directions

    Mix first 6 ingredients together in a large bowl. Pour into a greased 13 X 9 inch pan. Mix egg substitutes, eggs and milk and pour over bread mixture.



    Cover and refrigerate overnight.



    Bake for 1 hour in 350 degree oven.
