Overnight Breakfast Casserole
Yields: 9 servings, 245 calories, 7 grams fat, 2 grams fiber.
10 slices of white-wheat bread, cubed
3/4 pound of ham, chopped
3/4 cup onion, chopped
8 ounces fresh mushrooms
3/4 cups low fat Swiss cheese
3/4 cup low fat cheddar cheese
1 1/2 cups egg substitutes (equivalent of 6 eggs)
2 whole eggs
1 1/2 cups skim milk
Mix first 6 ingredients together in a large bowl. Pour into a greased 13 X 9 inch pan. Mix egg substitutes, eggs and milk and pour over bread mixture.
Cover and refrigerate overnight.
Bake for 1 hour in 350 degree oven.
