11/23/2004 Twice Baked Sweet Potatoes



Serves 6-8 people

  • 4 sweet potatoes
  • 5 cups mashed potatoes (home made or instant)
  • 1/2 cup cooked and diced bacon
  • 1/2 cup cheddar cheese
  • Salt, pepper, garlic


    1.) Wash sweet potatoes in cold water.

    2.) Place into preheated oven at 350 degrees and bake for 20-25 minutes, or until andante.

    3.) Remove from oven and cool.

    4.) Cut into halves.

    5.) Remove enough sweet potato from center to make a pocket to hold twice bake mix.

    To make mix:

    1.) Add mashed potatoes, cooked and diced bacon, cheddar cheese, salt, pepper, and garlic to your taste.

    2.) Stir together ingredients and spoon into piping bag.

    3.) Pipe into shell the potato mixture and place into oven for 15-20 minutes or until internal temperature is 160 degrees.

    4.) Garnish with fresh chopped parsley.
