Ingredients
1 cup butter or margarine
1 ¼ cups brown sugar
2 eggs
1 teaspoon vanilla
2 cups cooked pumpkin**
4 ¾ cups flour
1 tablespoon cinnamon
2 teaspoons baking powder
2 teaspoons baking soda
2 teaspoons nutmeg
½ cup raisins
Directions
Heat oven to 350 degrees. Grease 2 cookie sheets. Cream butter or margarine and brown sugar. Mix in eggs, vanilla, and pumpkin. Mix dry ingredients separately, then stir into first mixture. Stir in raisins. Drop by spoonfuls onto cookie sheets. Bake 15 minutes.
**To prepare fresh “pie” pumpkin, cut in half, scoop out seeds, and bake cut-side down with a little water in the pan at 350 degrees for 40 – 50 minutes. Let cool, then scoop out pumpkin flesh and mash or puree lightly.
