Crop Circle Wheat Zucchini Bread



1 stick butter (room temperature)
1 1/2 cups sugar
1/2 tsp vanilla
2 eggs (room temperature)

Cream together in a large bowl.

Stir in:

1/2 cup Crop Circle Wheat or other wheat beer.
2 cups flour
1/2 tsp salt
2 tsp baking powder
2 cups shredded zucchini*
1/2 cup chopped walnuts


Grease a bread pan with butter and pour batter into it or line a muffin tin with muffin liners. Preheat oven to 350 degrees. Bake 25-30 minutes or until a toothpick pulls clean from the bread.

*Can substitute one cup of cranberries or blueberries.
