Garlic Turkey-Broccoli Stir Fry (January 3rd)

Ingredients

  • 2 tsp sesame oil, divided
  • 1 lb turkey tenderloin, breast or cutlets, cut into thin strips
  • 1 cup fat free, low sodium chicken broth
  • 4 garlic cloves, minced (garlic press if easier)
  • 1 1/2 tbs cornstarch
  • 1/4 tsp red pepper, crushed
  • 1/4 tsp salt
  • 1 red bell pepper, cut into thin strips
  • 2 cups fresh broccoli florets
  • 1 8oz can sliced water chesnuts, drained
  • 2 tbs low sodium soy sauce

    Directions

    1.) Add sesame oil to non-stick skillet

    2.) Add turkey and stir fry 5 minutes

    3.) Remove turkey and set aside

    4.) Combine broth and next 4 ingredients in a small bowl, stir until cornstarch dissolves, and set aside

    5.) Add remaining 1 tsp oil to pan and add red pepper strips and broccoli, stir fry 1 minute.

    6.) Add water chestnuts and stir fry 30 seconds

    7.) Stir broth mixture, and add to pan with soy sauce, turkey and any accumulated juices.

    8.) Bring to a boil, cook 1 to 2 minutes or until slightly thickened

    9.) Serve with rice
