2T (1/4 stick) butter, softened 6-8 slices French Bread or Sourdough Bread cut into 1/2 inch cubes1 pound bacon, cooked and crumbled1/3 cup spinach, cooked, chopped, and well drained1 1/2 C cheddar cheese, shredded5 large eggs, beaten2 cups half and half1 t salt1t dried mustard3 scallions (white and green parts), chopped for garnish1T fresh parsley, chopped, for garnish
1.) Butter a 13/9 inch baking pan.
2.) Place bread cubes in baking pan.
3.) Add bacon and spinach.
4.) Top with cheese.
5.) Whisk together eggs, half and half, salt, and dried mustard.
6.) Pour over bread mixture, covering thoroughly.
7.) Cover baking pan with plastic wrap and refrigerate overnight.
8.) Preheat over to 350F.
9.) Remove plastic wrap and bake for 35-45 minutes or until set and browned on top.
10.) Garnish with scallions and parsley.
