Easter Brunch Casserole

Ingredients

  • 2T (1/4 stick) butter, softened

  • 6-8 slices French Bread or Sourdough Bread cut into 1/2 inch cubes

  • 1 pound bacon, cooked and crumbled

  • 1/3 cup spinach, cooked, chopped, and well drained

  • 1 1/2 C cheddar cheese, shredded

  • 5 large eggs, beaten

  • 2 cups half and half

  • 1 t salt

  • 1t dried mustard

  • 3 scallions (white and green parts), chopped for garnish

  • 1T fresh parsley, chopped, for garnish
  • Directions

    1.) Butter a 13/9 inch baking pan.

    2.) Place bread cubes in baking pan.

    3.) Add bacon and spinach.

    4.) Top with cheese.

    5.) Whisk together eggs, half and half, salt, and dried mustard.

    6.) Pour over bread mixture, covering thoroughly.

    7.) Cover baking pan with plastic wrap and refrigerate overnight.

    8.) Preheat over to 350F.

    9.) Remove plastic wrap and bake for 35-45 minutes or until set and browned on top.

    10.) Garnish with scallions and parsley.
