Quick Cassoulet (Peasant Stew)

Ingredients

  • 1 can creamy onion soup
  • 1 can tomato soup
  • 1 cup water
  • 1 (16 oz) can small white beans, rinsed and drained
  • 3/4 lb Kielbasa, cut into 1-inch slices
  • 4 small (3/4 lb) potatoes, peeled and quartered
  • 3 medium (1 cup) carrots, cut into 1/2 inch pieces
  • 1/2 tsp dried thyme, crushed
  • 1/8 tsp pepper
  • 1 bay leaf

Directions

Combine all ingredients in a 4-quart saucepan. Heat to boiling. Reduce heat to low. Cover and cook 25 minutes or until vegetables are tender, stirring occasionally. Discard bay leaf. Yields 8 cups or 5 servings.
