1.Bake or broil 2 chicken breasts.
Cut into bite-size pieces.
2.Add 1 cup Quinoa with 1 ½ cups of water and bring to a boil. Cover with a lid and simmer for 15 minutes.
3.Mix the chicken, cooked Quinoa, 1 cup cooked corn, 1 cup cooked black beans, ½ cup chopped red pepper and serve.
