1 cup all purpose flour
¼ cup whole wheat flour
¾ cup ground flaxseeds (or flaxseed meal)
2/3 cup white sugar (or sugar substitute)
2 tsp. baking powder
¼ tsp. salt
2 eggs (or egg substitute)
¼ cup skim milk
¼ cup canola oil
1 cup mashed bananas (about 3 medium or 2 large bananas)
½ tsp. vanilla
1/3 cup chopped walnuts (optional)


Preheat oven to 350 degrees. In large bowl, mix flours, flax, baking powder, sugar and salt together. In food processor or bowl, mash bananas. Then add eggs, oil, milk, and vanilla. Mix together well. Combine wet ingredients into dry ingredients until just moistened. Fold in nuts. Coat 8½ by 4½ inch loaf pan with non-stick spray. Pour batter into loaf pan. Bake for 50-55 minutes, or until a toothpick inserted in center comes out clean. Let cool in pan for 10-15 minutes before turning out onto rack.
