Chipotle Chicken


2 pounds boneless, skinless chicken breasts, cubed
4 tablespoons olive oil
2 tablespoons White Jasmine Sajji Masala
1 tablespoon garlic, chopped
½ tablespoon ginger, chopped
½ teaspoon salt
1 8 oz can chopped fire roasted tomatoes
½ cup fresh cilantro, chopped


In a bowl add chicken, White Jasmine Sajji Masala, 2 tablespoons olive oil, garlic and ginger and ½ a teaspoon of salt. Mix it all together and set it aside. Heat two tablespoons of olive oil in a saucepan. Add chopped tomatoes and chopped onions. Stir everything around for a couple of minutes. Add shrimp with its marinade. Stir everything for a few minutes add chopped cilantro. Cover and cook on medium heat for about 10 minutes or until shrimp is cooked and sauce has thickened. Serve warm with basmati rice.
