PORK CROWN ROAST WITH WILD RICE STUFFING
Wild Rice Stuffing
2 lbs. cooked and rinsed wild rice
1 cup dried Wisconsin Cherries
1 cup diced carrots (small dice)
1/2 cup yellow onions (small dice)
1 cup celery (small dice)
1/2 cup orange juice
Pork Crown Roast:
Salt and Pepper to taste
Preheat oven to 325 degrees. Salt and pepper outside and inside of crown roast to taste, set aside. Mix all of the ingredients for the wild rice stuffing together in a mixing bowl. Stuff crown roast with the contents of mixing bowl. Cover all exposed bone tips with aluminum foil and cover entire roast with foil. Bake in oven until meat is done...
COOKING TIPS FOR THE PERFECT ROAST:
* For small crown roast (7 lbs or smaller) cook for 2 1/2 hours with stuffing in the roast.
* For a medium crown roast (7 - 9 lbs) cook 1 1/2 hours uncovered without stuffing, remove from oven. Place stuffing in cavity, re-cover with foil and bake for another 1 1/2 hours.
* For a large crown roast (10 - 12 lbs) cook uncovered without stuffing for 1 1/2 hours. Remove from oven and fill cavity with stuffing, cover and bake another 2 1/2 hours.
Once you removed crown roast from oven, let it sit covered on counter for 20 minutes before carving.
