Chipotle Rubbed Lamb Chops

Ingredients

Chipotle Rubbed Lamb Chops
12 lamb chops
4 T. New Mexican red chile powder – mild
2 T. Chipotle Powder
2 T. Sea Salt – fine
Spray olive oil

Minted Crème Fraiche
½ cup Crème Fraiche (make your own by combining sour cream and heavy
cream)
1 T. Mint Leaves – finely minced
1 T. Cilantro Leaves – finely minced
1 t. Sea Salt
1 t. fresh squeezed lemon

Directions

Chipotle Rubbed Lamb Chops
12 lamb chops
4 T. New Mexican red chile powder – mild
2 T. Chipotle Powder
2 T. Sea Salt – fine
Spray olive oil
Combine New Mexican chile powder, chipotle powder and salt in a
shallow bowl. Coat the outside of each lamb chop and place on a plate.
Spay the outside of each chop with olive oil and let sit for as long as
possible (15 minutes to 15 hours).
~Discard any remaining rub as it has been contaminated with raw meat~
Set your grill on a high temperature and let pre heat. When the grill is
hot, place chops on the grill and cook for 1.5 minutes on each side.
Remove from the grill and let stand for 5 minutes.
Serve with minted crème fraiche

Minted Crème Fraiche
Combine all ingredients and whisk thoroughly
