Ingredients
1 jalapeño cheese roll
4 oz beef tenderloin
2 oz monchago cheese
1 oz shredded lettuce
1 oz diced tomatoes
1 oz chipotle mayo
Beef Rub:
.5 oz smoked Serrano pepper powder
.25 oz Pasilla Negro chili powder
.25 oz kosher salt
.25 oz habanero powder
Chipotle mayo:
2 cups mayo
1 small can chipotle in adobo sauce
Directions
Mix all ingredients together
Mix and rub tenderloin. Roast tenderloin for 1hr 10 min @ 350 or until internal temp reaches 140 degrees. Remove and let rest for 5 minutes. Slice thinly.
To assemble Torta:
Place bistro sauce on roll layer beef then cheese add lettuce, tomatoes and eat!
