Sweet Bouquets

1 c. all purpose flour
1/2 cup wheat germ
1/2 tsp. salt
1 c. sugar
1 tsp. baking soda
5 T. olive oil
1 T. vanilla
3/4 pureed chickpeas
1/4 c. water
1 cup white chocolate chips, melted
Valentine’s Day cake sprinkles
Lollipop sticks

Preheat oven to 350 degrees.

In a mixing bowl combine sugar, flour, wheat germ, salt, and baking soda. Slowly add oil, vinegar, pureed chickpeas, and vanilla. Mix for one minute. Slowly add water and mix until smooth. Pour into a greased muffin tin and bake for 18-22 minutes, or until a toothpick inserted comes out clean. Let cool.

Crumble up cake into a large bowl. Add a teaspoon of water at a time, mixing until the cake is softened. Roll up the cake into a 1-inch diameter ball. Place on sheet tray lined with waxed paper. Continue rolling up balls until there is no more cake left.

Carefully place a lollipop stick in the center of each cake ball. Place tray in the freezer for 5-10 minutes or until firm.

Dip cake balls one by one into melted white chocolate. Immediately sprinkle with Valentine’s sprinkles. Place back on waxed paper until chocolate hardens. After all the cake balls are done, place the lollipop cakes in a vase and give to someone your bouquet to someone you love!
