Caleb Goessling's Chili Casserole


6 cups cooked white rice
1 lb ground beef
14 oz kidney beans
14 oz black beans
1 medium size white onion
1 green pepper
8 oz chipotle peppers in adobo sauce
32 oz petite diced tomatoes
3 cloves garlic
1 tbsp chili powder
1 tsp cumin
1 lb sharp cheddar
1 cup sweet corn


Brown ground beef, add herbs, spices, salt, chipotle pepper, corn, onions and green pepper. Add rinsed beans, stir until coated. Add tomatoes and rice. In a casserole dish, fold in cheese. Bake at 350 degrees for 40 minutes.
