2.5 cups of wheat flour
1.5 oz dry yeast
1/2 cup fine semolina (or cornmeal)
1/4 cup sesame seeds
1 T. olive oil
1 t. sugar
1.25 cups of warm water
1 beaten egg for brushing
Preheat oven to 350 F.
Combine sugar, yeast and water in bowl and place covered in a warm spot until it foams. Sift all dry ingredients into bowl, add oil, and mix in foaming yeast mixture.
Knead until smooth and cover in a warm place for 30 minutes.
Divide dough into twelve balls, flatten, and place on an oiled baking sheet to puff.
After buffing, brush them with egg and sprinkle with sesame seeds on top.
Bake for 12 minutes.
