2 ounces soft goat cheese
several leaves of Lettuce or spinach
2 scallions or 1 small white onion, diced fine
1 Lemon, wedged
1 TB olive oil
Cumin to taste
Salt & Pepper
Lay the greens onto a plate or on the bottom of a shallow bowl
Place the goat cheese onto the lettuce and form into a rounded mound,
making a shallow indentation on the top.
Drizzle the olive oil over the cheese
Garnish the cheese with diced tomatoes and scallions.
Sprinkle with cumin, salt and pepper to taste
Serve with a wedge of lemon.
