2 tbsps snipped fresh dill
3 oz smoked salmon
2-3 slices, cut into 1 1/2 x 1/4-inch strips
2 tbsps extra-virgin olive oil
2 tbsps unsalted butter
1/2 red onion, cut into thin lengthwise slices
1 bunch asparagus, cut diagonally into 1-1 1/2 inch pieces
16 oz penne
fresh ground black pepper
-Heat the butter & oil in a big skillet; add in the onion; cook/stir over low heat/flame for 5 mins, until tender (do not brown).
-Add in asparagus; stir-fry until crisp-tender, about 5 mins; remove this from heat.
-Add the salmon to the skillet; stir this to mix; sprinkle w/ pepper to taste.
-Cook pasta in plenty of salted boiling water, stirring every once in awhile, until al dente; drain.
-Return pasta to pot; add the asparagus mixture & dill; toss to mix.
-Spoon into a large serving bowl & serve at once.
