Fresh Garden Zucchini Bake


2 zucchini-sliced
15 tomatoes peeled
1 carrot-diced
¼ cup fresh basil chopped
1 onion-diced
1 T fresh oregano-chopped
1 green pepper-diced
2 tsp salt
4 garlic cloves
1 tsp sugar
1 tsp black pepper
1 T olive oil
2 C mozzarella cheese
½ C parmesan cheese


1. Place your tomatoes in boiling water for 7 minutes. Remove from water , peel and chop
2. Diced you onion and green pepper. Set aside
3. Cut your carrot. Place your carrot and garlic in a blender and mix until smooth
4. Place your green pepper, onion, carrots, and garlic in a pot. Add olive oil and pepper and sauté until soft
5. Add your tomatoes, sugar, basil, and oregano. Bring to a boil and let boil for 3-4 minutes. Turn heat down and simmer for 2 hours
6. Layer your pan in this order when sauce is done. Bottom- sauce, then zucchini, then mozzarella. Repeat this twice. Top with mozzarella and parmesan
7. Bake for 40 minutes and serve
