Kelly Miller's Kielbasa

Ingredients

1 pkg. Kielbasa
1 cup white rice (any type)
4 Bell Peppers (or about 1/2lb. of fresh or frozen vegetables)
1 can diced tomatoes
Lemon Pepper Seasoning

Directions

1. Cook the rice according to the directions on the packaging
2. Once you turn the heat on the rice to low, start cutting up kielbasa into bite-size pieces
3. Put kielbasa in frying pan and sprinkle with lemon pepper seasoning
4. Fry kielbasa, stirring frequently
5. Cut up fresh vegetables (NOTE: See note below if you're not using fresh vegetables)
6. Add vegetables to frying pan, adding more seasoning if desired
7. Lower heat to Medium and continue to frequently stir meat and veggies
8. Once rice is done, turn heat off frying pan
9. Open diced tomatoes and add to rice (do not drain tomatoes)
10. Serve rice and meat/veggies in separate dishes

Note on vegetables:
1. If using fresh veggies: sautee in pan with meat
2. If using frozen veggies: steam vegetables in separate pan or in microwave and season
3. If using canned veggies: do not prepare in any way, just dump into pan once the meat is done and do not add extra seasoning
