Chicken and Corn-Tomato Salad

Ingredients

1 1/4 boneless chicken breast
2 pints halved cherry tomatoes
2 cups corn kernels
Scallions
Garlic
Lime
Cilantro
Avocado wedges

Directions

Cook chicken breasts in a large skillet. Remove the chicken, then add sliced scallions and minced garlic, stirring for about a minute. Add cherry tomatoes and corn, and cook a few more minutes. Season with salt and pepper. Serve the chicken on top of the salad, with a squeeze of lime, cilantro and avocado wedges.
