Sweet potato goat cheese salad


2 fresh sweet potatoes, peeled
½ cup craisins
½ cup almonds, sliced or slivered
¼ cup lemon juice
¼ cup honey
4 oz goat cheese
5 oz fresh spinach
½ cup good olive oil


Dice and cook sweet potatoes until knife tender. Cool and set aside. Combine lemon juice, honey and olive oil to make dressing. Set aside. Combine all ingredients, toss with dressing and serve.
