Sarah Carlson's Spinach, Tomato Omelet


Egg beaters (2 egg serving)
Baby spinach
1 Roma tomato
Parmesan cheese
olive oil, garlic powder, salt, pepper


Use two frying pans and put the two egg serving of egg beaters in one.
In the second, saute spinach in olive oil, garlic powder, salt and pepper. When the spinach is "wilty" add the chopped tomato. Cook until you like the texture.
In the meantime, when egg cooks in the other pan, add parm. cheese (anything from tablespoons to 2/3 cup) on one half and the veggies on the other. Flip it over and wait for the cheese to melt. Enjoy!
