7 oz butter
10 oz flour
10 eggs
2 cups water
1 tablespoon sugar
½ teaspoon salt
Vanilla ice cream
Chocolate sauce (see sub recipe)
Carmel sauce (see sub recipe)

Chocolate sauce:
8 oz semi sweet chocolate
5 oz corn syrup
5 oz butter

Carmel sauce:
½ cup sugar
2 table spoons water
½ cup heavy cream


Method: place water, sugar, butter and salt in a sauce pan. Boil for 1 minute. Remove from heat and add flour. Stir to incorporate. Add eggs one at a time stir until the batter pulls from the side of the pan then add the next egg. Pre heat oven to 425 degrees, pipe out on baking sheet, bake for 20 minutes. Remove from oven a cut a small slit in the side of each pifitrol place back in oven @ 375 for 10 minutes more.

Sauce:Chop chocolate, combine all ingredients and melt over a water bath.

Carmel Sauce: Place sugar and water in pan cook until golden, add cream and stir until sauce is smooth.
