¼ Cup Chives
1 Tablespoon Minced Garlic
½ Cup Olive Oil
2 Tablespoons White Vinegar
¼ Cup Capers
1 Tablespoon Orange Zest
½ Pound Arugula
Blend All Ingredients In A Blender Until Smooth; Set Aside

1 Large Cucumber
Directions
Debone Whitefish; For Easier Deboning, Place Covered In Microwave For 15 Seconds
Cut Cucumber In ¼ Inch Slices
On A Platter, Place Cucumber Slices And Top With A Spoonful Of Whitefish
Drizzle Salsa Verde On Top Of Whitefish
Serve Cold Or At Room Temperature
