Vegetable Quesdillas


4 large tortillas
1 tablespoon olive oil
1 red pepper,chopped
1 green pepper, chopped
½ cup black olives
½ cup fresh cilantro, chopped
1 cup White Jasmine Gouda cheese, grated


Heat a skillet, add olive oil. Turn the heat to medium and add a tortilla and turn it over once the bottom is golden brown and a little crispy. Add the cheese and let it melt for a couple of minutes, add all the toppings and flip one half of the tortilla over, just like an omelet and press the edges. Serve with guacamole or salsa
