The company has been around 3 years and is a true representative of buying local. In this week's Hot Trends, we'll give you a taste of Potter's Crackers.

Time to circle the wagons and buy local in this tough economy and one Madison cracker company is making that very easy for us to do.

"Since this is the cheese state we thought it was really appropriate to have a great cracker in this state too.. "

Potters Crackers is growing in popularity. They sell at the local farmer's market gauging people's reaction to their food.

But its what's *in the food that Wisconsin farmers appreciate.

"We want to capitalize on the Wisconsin products that's why we don't do an olive oil cracker because they don't grow a lot of olive oil here in Wisconsin and most of our crackers are made with butter. We did recently come out with a vegan cracker where we use canola oil but otherwise we want to stick with as many WI products as possible. "

They comb the state for products to use in their crackers.

"We'll be doing a rhubarb cracker. As soon as we see that in our farmers market, You'll know you'll be seeing it in a cracker. and then as the year progresses we'll do a carrot graham, apple graham in the fall. we take advantage of sweet potato in the fall you'll be seeing sweet potato crackers. "

Each cracker is hand cut. They care so much about recycling and keeping things local even a local farmer gets these cracker ends to feed to the pigs.

Year-round favorites are the garlic and baby onion crackers, toasted sesame and the caraway rye and honey graham.
