Rustic bread & tomato salad recipe

French bread, about a half loaf
3-4 Very Ripe Tomatoes, or about 20 cherry tomatoes cut in half
1 Green Bell pepper
1/2 Cup Olive Oil
1/3 Cup red wine vinegar
1Tablespoon Balsamic Vinegar (if you have it).
1or more Tablespoon minced Garlic (fresh cloves are most flavor intense)
Secret ingredient; Bacon - as little or much as you like
Sea Salt and Black pepper to taste.

Cut the bread into long slices and drizzle some of the olive oil onto the bread. Season with pepper, some garlic. Set aside .
Now, whisk together Olive oil, vinegar , set aside.
Chop the tomato and bell pepper into bite size pieces. Season the veggies with5h salt and pepper , stir. This is Rustic preparation, you are creating a chunky, simple salad.
Hand mix the bread chunks into the tomato and olive oil . Place the bowl into the refrigerator for 15 - 30 minutes to set up flavors.
Chop the bacon, and see what else you have on hand to add...lettuces, sprouts, avocado, black olives, cheeses, whatever you have in abundance.
Service: Toss in the chopped bacon, mixing well to coat.Consume with Gusto.

Pour the olive oil mixture over the tomatoes, Stir well to break up the tomatoes, releasing the juices.

Whisk together the oil, vinegar, garlic and salt
Tear the bread into bite size pieces.
