MADISON, Wis. (WMTV) -- Greenbush Bakery on Regent Street will be leaving its original location at the end of August.
The bakery, currently located at 1305 Regent Street, will be moving just down the street to 1402 Regent Street, a new location they are currently in the process of renovating.
Taylor Carlson, general manager of the bakery, said their lease ends on August 31, and they hope to open across the street the following day. Carlson said the Rocky Rococo next door will be taking over their current space for a new project.
"It's going to be a weird transition but I think it's going to be good," Carlson said. "Just kind of revamping the image of the bakery, getting some new equipment and stuff like that, and we're going to have some indoor seating in there too."
Carlson said the bakery has been in its current location since 1996, when his grandfather bought the business.
"Not moving too far, so I think it's going to be an easy transition for our customer base and for us," Carlson said. "Keeping everything the same, it's going to be the same old Greenbush, same old doughnuts."
Carlson said they are also excited to take advantage of the new space.
"The way our production facility is, we’re going to have to do all new renovations and put a full kitchen in there, and there’s a lot of windows over there too, so we’re kind of using that to our advantage," he said. "Some of our production’s going to be visible. We’ve got our sheeter in the back and that’s going to be running along the Regent Street windows there so you’ll be able to see some of the doughnuts being made. And we’ll also have a live stream of the fryer so you’ll be seeing doughnuts in the retail area on a screen, seeing your doughnuts being made."
