-6 cups watermelon (seeded and cubed)
-1 TBSP rice vinegar
-3 ounces feta cheese (crumbled)
-1 loosely packed cup fresh mint leaves
-Black pepper (to taste)
-Salt (to taste)
DirectionsSeed and chop watermelon. Pour off any excess juice that has gathered around the watermelon. Toss gently with the rice vinegar. Toss with the feta cheese crumbles, just until the watermelon is coated.
Chop the mint leaves into very fine, into ribbons. Toss with the watermelon and spread in a serving bowl, sprinkle with the black pepper and salt. This can also be served over a bed of greens.
