Metcalfe’s Signature Drunken Catfish


1 cup bourbon
1 cup soy sauce
¼ cup local honey
3 tablespoons sesame oil
2 teaspoons minced garlic
1 tablespoon minced ginger
1 cup diced onions
1 pound catfish filets


Stir together all ingredients except catfish. Add catfish and marinate 1-24 hours.

Preheat oven to 350.

Remove catfish from marinade and place on sheet pan. Top fish with marinated onions. Bake 20 minutes or until fish flakes in center.

This can also be cooked on a grill.
