Cheddar Burger with Tarragon Russian Dressing


Cheddar Burger
½ C. Mayonnaise
⅓ C. Ketchup
1 Tbsp. Red Wine Vinegar
1 Tbsp. Yellow Onion minced
1 Tbsp. Parsley chopped fine
1 Tbsp. Tarragon chopped fine
1 tsp. Worcestershire Sauce
1 ¼ Lb. Bacon thick sliced
2 ¼ lb. Ground Beef
1 tsp. Salt
½ tsp. Black Pepper
3 oz. Extra Sharp Cheddar Cheese
2 cups Mixed Greens
6 Slices Tomato (Heirlooms work great)
1 ½ C. Red Onion sliced thin


For the Tarragon Russian Dressing: Using a mixing bowl, mix together mayonnaise, ketchup, vinegar, onion, parsley, tarragon and Worcestershire Sauce. Whisk until well mixed. Cover and refrigerate.

In a large skillet, cook bacon 3 minutes per side. Turn bacon once during cooking. When done place cooked bacon on a tray lined with a paper towel to catch any excess drippings.

Form ground beef into uniform sized patties. Place on a preheated grill cooked your desired doneness. Top each burger with cheese. Spread Tarragon Russian Dressing sauce on bottom of bun place burger on top and top burger with mixed lettuce, sliced tomato, red onion and cooked bacon. Enjoy!!
