Oven roasted root vegetables



Ingredients

2 sweet potatoes peeled and diced (Large)
3 parsnips peeled
2 beets peeled and quartered
2 rutabagas
4 cloves fresh garlic
4 tablespoons olive oil
5 sprigs of fresh thyme
3 tablespoons butter

Directions

Combine all ingredients and roast @ 350 until vegetables are fork tender.
