Bourbon Whipped Sweet Potato and Sage Amaretto Cream


10 pounds Cooked sweet potatoes
1 cup brown sugar salt and pepper to taste
1 cup Bourbon / flamed

Sage Amaretto (per person served)
3 fluid oz Heavy Cream
1tbsp fresh chopped sage
2fluid oz Amaretto
2oz margarine/butter


Make sure potatoes are drained
Flame the bourbon and simmer til the fire is gone if serving minors
Add sugar to Bourbon stir until dissolved* Add this mixture to potatoes* Before serving add melted butter and place brown sugar on table for sweetner for those who prefer sweeter.

Sauce pan flame Amaretto* if serving minors simmer until flame is gone*
Add cream (simmer on low heat to thicken)
Finish with sage and butter
salt and pepper for taste
