5 lbs lamb meat (leg or stew meat)
2 cups chicken stock
6 clove garlic crushed
4 tablespoons smoked Serrano pepper powder
4 tablespoons pasilla negro chili powder
2 teaspoons oregano
2 teaspoons chili powder
2 teaspoons dried thyme
½ teaspoon cinnamon
3 teaspoons kosher salt
2 tablespoons black pepper


Combine all the spices and rub onto meat. Place meat in a deep pan; add chicken stock, cover and roast in a oven at 325 for 4 hours or until meat is very tender.
