Super Bowl Bacon & Cheddar Mini Meatloafs




Ingredients

5 lbs. grass-feed ground beef
2 cups yellow onion, diced small
1-1/2 cups cooked bacon, chopped small
1-1/4 cup sharp cheddar
6 eggs
4 cups panko bread crumbs
1/2 bunch parsley, chopped fine
1 tbsp garlic powder
1/2 tbsp salt
1/4 tbsp cracked black pepper
2 cups ketchup
1/4 cup Worcestershire sauce

If you choose not to use the mashed potatoes you can use a traditional tomato sauce on the meatloaf.

Sauce Recipe

2 cups ketchup
1 cup brown sugar
2 tbsp Worcestershire sauce
2 tbsp chopped garlic
1 tbsp cracked black pepper

Combine all ingredients in a small mixing bowl and stir until well combined. Top meatloafs with sauce when done.

Directions

Prepare mashed potatoes separately, using a traditional mashed potatoes recipe or a mix. Set it aside. Or, see below for tomato sauce recipe for sauce to top loafs.

Preheat oven to 350 °F.
Using a large mixing bowl, or a mixer with a paddle attachment, combine all ingredients.
In a small mixing bowl, beat eggs until yolk and whites are well mixed. With mixer on low speed, or using a sturdy spoon, mix in eggs with all other ingredients. Mix just until everything is incorporated. Do not over mix.
Spray a mini-muffin pan with non-stick cooking spray, and form uniform balls of the meat mix and begin to fill the pan.
Place muffin pan on cookie sheet to catch any excess liquid. Bake in the oven for 15 to 20 minutes, depending on oven. Internal temperature should read 180 degrees if using a meat thermometer.
Use a pastry bag to pipe decorative mashed potatoes on top or use tomato sauce.

CHEF CHANTELL'S TIPS

Mini loafs are best if served hot and tasty with your favorite local beer for the perfect pairing.
Stick a football appetizer stick in there to keep team spirit going. You can get the sticks at party supply stores.
You can prepare the mini loafs ahead of time, as they freeze nicely.
You can also make them cupcake size, which can be used as small patties for sliders.
If you're traveling to watch the game, you can bake and take them. They are no hassle to carry along and they take only minutes to reheat in the oven.
If you don't like beef, you can substitute ground turkey or chicken, or use a combination of pork, veal and beef.
The recipe above uses cheddar, but you can use a different cheese, such as mozzarella or blue cheese. If using ground chicken or turkey, Gouda or Swiss would be great.
