Chicken BBQ Nachos


1 bag tortilla chips
1 deli rotisserie chicken, shredded
1 bottle of your favorite BBQ sauce
1 can barbecue baked beans
Tony Chachere’s Original Creole Seasoning
3 cups shredded cheddar cheese
1 cup chopped bell peppers
1 cup chopped red onion
½ cup chopped cilantro *optional*


Line a baking sheet with foil (for easy clean up) and preheat your oven to 350 degrees.
In a bowl, combine the chicken and barbecue sauce.
The key to making great nachos is layering! To assemble the nachos first put down a single layer of tortilla chips, next put half of the chicken on top, spoon half of the beans on the chicken. Shake a generous amount of creole seasoning on top of the chicken and beans. Continue layering with half the cheese, peppers, and onions. Repeat this process for the second layer.
Place nachos in the oven for about 5 minutes or until heated through and the cheese is melted.
Serve with extra BBQ sauce on top.
This recipe is also excellent using shredded pork!
