Cuban Black Bean Burger with Pineapple Avocado Salsa




Ingredients

Black Bean Burger
2 C. Black Beans
2 C. Cheddar Cheese (grated) reserve 1 C.
1 C. Corn ( fresh or frozen)
1 Bunch Scallions (sliced thin)
½ Bunch Cilantro
2 Tbsp. Ground Cumin
1 Tbsp.Ground Coriander
½ tsp. Cayenne
2 Large eggs (beaten)
2 ½ C. Breadcrumbs
A few Tbsp. water or Vegetable stock

Pineapple Avocado Salsa
1 Ripe Pineapple small diced
4 Tbsp. Red Bell Pepper small diced
1 Ripe Avocado diced
¼ Bunch of Scallion sliced thin
1 tsp. Cumin
½ tsp. Coriander
½ tsp Chili flakes
½ tsp. Salt
3 Tbsp. Olive oil
3 Tbsp. Lime juice

Directions

Black Bean Burger
In a medium to large size mixing bowl, combine the chopped herbs, breadcrumbs, spices, cheese (reserve 1 cup to the side) and half the amount of black beans. Using a food processor pulse the reserved beans and add to the bowl with all other ingredients. Add in beaten eggs and breadcrumbs and mix until everything is well incorporated. Add a few drops of water or stock if mix is too dry. Begin to form uniform size patties. Place burgers on a lined baking sheet, and bake in a oven set at 350 F. for 12-15 minutes. Burgers should be firm to touch. Top each burger with reserved cheese. And a spoonful of salsa Enjoy!

Pineapple Avocado Salsa
In a medium size mixing bowl add ingredients excluding the avocado. Stir to mix everything well. Add in avocado and gently fold in to incorporate with the other ingredients.
Top each Cuban Black Bean Burger with a spoonful of salsa. Also great with tortilla chips or tacos.
