1 box dark chocolate cake mix
¼ cup coffee grounds
1 (12.5 oz.) jar dark chocolate frosting
¼ cup heavy cream
¼ cup dark roast coffee or espresso
1 cup dark chocolate chips
Dark cocoa powder and red sprinkles, for garnish
1. Prepare dark chocolate cake mix according to package directions, adding in coffee grounds to the batter before baking. Remove from oven and allow to cool.
2. In a mixing bowl, add entire prepared cake, breaking it up into crumbles. Stir in chocolate frosting until combined. Roll into bite-sized balls and place on parchment paper.
3. Heat heavy cream and coffee in a microwave-safe bowl for 90 seconds. Stir in chocolate chips until melted. Pour ganache over each cake bite until coated. Immediately sprinkle with cocoa powder and red sprinkles. Allow to set.
