2-3 zucchini, spiralized, sliced, or peeled into long ribbons
2 ears of sweet corn, shucked, and kernels cut off cob
½ up feta cheese, crumbled
Lemon-Basil Vinaigrette (recipe below)
Directions1. Place spiralized zucchini and sweet corn together in a large bowl
2. Drizzle lemon-basil vinaigrette over vegetables, and toss to coat
3. Top fresh salad with crumbled feta cheese, and serve immediately, or can be chilled
1. In a small bowl, add the juice and zest of one lemon, one clove garlic, minced, 2 teaspoons dijon mustard, and 2 teaspoons Tony Chachere’s Original Creole Seasoning. Stir to combine. Slowly whisk in ½ cup olive oil. In addition to being a salad dressing, this vinaigrette also makes a wonderful marinade.
