1 clove garlic, minced
3 Tbsp. balsamic vinegar or fresh lemon juice
4 Tbsp. olive oil
1 tsp. honey
1 Tbsp. fresh basil, chopped
1 Tbsp. fresh oregano, chopped
Coarse salt and black pepper, to taste
2 (15 oz.) cans low sodium white beans, drained and rinsed
1 medium zucchini, diced
1 medium yellow squash, diced
½ red bell pepper, diced
½ green bell pepper, diced
½ red onion, diced
1. In a large bowl, whisk together garlic, vinegar, olive oil, honey, basil and oregano in a bowl. Season to taste with salt and pepper.
2. Add beans, zucchini, squash, bell peppers and onion in the bowl. Toss to coat. Taste and adjust seasoning, if necessary.
