Napa Cabbage Salad


2 Tbsp balsamic vinegar
2 Tbsp. natural peanut butter
1 Tbsp low sodium soy sauce
1 garlic clove, minced
1 tsp white sugar
1 cup basil leaves
1 cup mint leaves
1 cup cilantro leaves
4 cups thinly sliced Napa cabbage
1 cup grated carrot
¼ cup roasted peanuts


1. In a small bowl, whisk together the vinegar, peanut butter, soy sauce, garlic and sugar.
2. Chop the basil, mint, and cilantro leaves and toss with the cabbage and carrot.
3. Toss the salad with the dressing and garnish with peanuts.

Serves 4 as a side salad.
