2 cups chopped corned beef
2 cups shredded swiss cheese
Cabbage slaw (see recipe)
1 bag kettle style potato chips
1 cup sliced green onions
½ cup thousand island dressing
Tony Chachere’s Original Creole Seasoning
DirectionsPreheat oven to 400 degrees
Line a rimmed baking sheet with foil or parchment paper. Layer half of the kettle chips on the baking sheet. Continue layering half the corned beef, swiss cheese, cabbage slaw, green onions, dressing, and Tony Chachere’s seasoning. Bake for 5-8 minutes or until the cheese begins to melt.
Serve hot with additional green onions, thousand island, and Tony Chachere’s
Shred or chop one head of cabbage and place in bowl. Add ¼ cup of white vinegar and toss. Add a few generous pinches of Tony Chachere’s Original Creole Seasoning, toss again. Taste and adjust by adding more vinegar or Tony Chachere’s. (Optional, sprinkle in 2 teaspoons of sugar).
