2 Tbsp. olive oil
1 lb. large (16-20) tail-on shrimp, peeled and coarse salt and freshly ground black pepper, to taste
4 cloves garlic, minced
1 Tbsp. butter
½ cup fresh parsley, minced, divided
½ cup freshly shaved Parmesan cheese, divided
DirectionsPlace olive oil in a large skillet on medium-high heat. Season shrimp with a dash of salt and pepper; add shrimp to the garlic and saute 1-2 minutes, until the tail just starts to curl. Add garlic and saute 30-60 seconds. Remove shrimp and set aside. Add butter and swirl until melted. Add parsley and Parmesan cheese and toss to coat.
