3 Tbsp. extra virgin olive oil
1 ½ Tbsp. balsamic vinegar
½ tsp. coarse salt
¼ tsp. ground black pepper
1 garlic clove, minced
2 Tbsp. fresh basil, chiffonade
4 medium heirloom tomatoes, cored and cut into wedges
2 oz. goat cheese, crumbled
Directions1.Whisk together olive oil, balsamic vinegar, salt, pepper and garlic in a small bowl. Taste and adjust seasoning, if necessary.
2.Layer tomato slices, basil and goat cheese on a platter. Pour dressing over the salad and top with additional coarse salt and ground black pepper.
